Simple Breakfast Casserole

Now is about the time of year where people start to lose steam on their New Year's Resolutions, myself included. So I thought I would share a simple breakfast casserole that can be both healthy and indulgent, depending on what you put in it. At least you can start your days off on the right track!



All you will need for this recipe is:

8 eggs

1/4 C. 2% Milk

Salt and Pepper to taste

Whatever items you want to add in....


Preheat the oven to 350 degrees. Grease a 9x9 baking pan or use a non-stick 9x9 baking pan. Whisk together all of the ingredients listed above.


Here is where you get to add in the good stuff....

For my breakfast casserole I added in low fat sausage, spinach, mushrooms and onion.



But the sky is the limit.... mix in cheese and potatoes or bacon and tomato.... make it Mexican with some chorizo and black beans...


Then pour the mixture into the pan and bake until it is no longer runny - about 25-35 minutes.





The best part about this casserole is that it will feed the entire family and can be made beforehand and refrigerated. So you can feel good about grabbing a piece as you head out the door instead of stopping for a donut or other pastry. It's a simple way to try to stick to that diet.... I know it has helped me!
