It's fig season! Oh how I love fresh figs and the amount of things you can make with them. One of my favorite flavor combinations is fig and proscuitto with a little smear of blue cheese. I make it as an appetizer. You get the sweet and salty and a little tang from the cheese. So good! But you can't just eat this all day.... so I decided to turn it into a salad.
By turning it into a salad, I feel a bit healthier and I can have this favorite flavor combination for lunch or dinner. It is a very easy salad to make, the hardest part is making the dressing, and even that only takes a few minutes.
Here is what you need:
6 or more fresh figs
1/4 C. crumbled bleu cheese
6 slices of proscuitto, very thin
6 C. chopped kale
2 Tbsp. good balsamic vinaigrette
1/4 C. extra virgin olive oil
juice of 1 lemon
First, begin preparing the dressing. Take the 2 tablespoons of balsamic vinaigrette and heat in a small pan over medium heat until it reduces by half. Set aside and allow it to cool.
Put all of the kale into a salad bowl. Cut all of your figs into halves or quarters, lengthwise, and put over the kale.
Next, tear apart your proscuitto and also sprinkle that over the kale. Do the same with the bleu cheese.
Now that your balsamic reduction is probably cooled you can combine it with the olive oil and lemon juice. Whisk until it is all fully combined and then drizzle it over the top of the salad.
So easy, right! Now you can enjoy that sweet fruit either as an appetizer or in a salad.
