Breakfast Favorites - Vanilla Scones

I love scones…. and the only person who loves them more than me is my daughter. We have made a few different recipes for vanilla scones, but this time we kind of put together our own. It came out so yummy. I mean, YUMMY! They were gone in a matter of hours. Give them a try.

Dry Ingredients

  • 2
cups all purpose flour

  • 2
teaspoons baking powder

  • 1⁄2
teaspoon baking soda

  • 1⁄2
teaspoon salt

  • 1⁄2
cup sugar

  • 5
tablespoons unsalted butter, cold, cut into little cubes

Wet Ingredients

  • 1
cup plain greek yogurt

  • 1

  • 2
teaspoons vanilla extract

To make the glaze:

Mix 1 1⁄2
cups powdered sugar and water, as needed. Mix together until it looks smooth and runny. (no clumps!) Add vanilla bean if you are adventurous.

Drizzle them with chocolate sauce.

Preheat oven to 400 deg. F.

In a medium bowl, whisk together dry ingredients.

Next, cut the cold butter into the dry ingredients until flour resembles oat meal. I use a pastry cutter to do this.

In another bowl, whisk together the sour cream, egg and vanilla extract until blended well and smooth. Add this to the flour-butter mixture and stir until dough forms a cohesive ball. Use a rubber spatula to get the dry bits fully incorporated.

Place the sticky dough onto a lined baking sheet and smash (yes that is a technical baking term) into a disk about 1-inch thick. Cut the dough into wedges. Or use a scone pan if you are dance. Bake for 15 minutes or until golden brown on top. Allow to cool to room temperature and drizzle with chocolate or vanilla glaze. Eat up!
